Dry malt extract (DME) is a form of liquid malt extract: it’s been processed so virtually all the water has been taken out of it. It is popular because of its convenience & shelf life.

Convenience: Simply pour DME out of the bag to use it. Less is needed, because DME is concentrated. One pound of liquid malt extract is equivalent to .85 lb of DME. It can also be used in place of corn sugar for priming. When using DME for priming beer / bottle carbonation, use 1 + cups of DME (as opposed to + cup of corn sugar) to bottle 5 gallons of beer.

Shelf Life: You can seal DME back up in its bag & return it to your pantry, as opposed to liquid malt extract which has a danger of contamination even if refrigerated. Remember, DME absorbs water very easily & quickly. Do not open the bag until just before use. When storing it, keep leftovers in their original bag, overwrap with a ziplock style bag & store in an airtight container – in a very dry area. Otherwise, you may go back to use it & it has turned into a “hard brick”. When stored correctly, its shelf life is a year or more.
